🌾 Welcome to My Low‑Carb Life As of January 2026, I’ve started a new chapter: I recently began the GLP‑1 Wegovy pill to help me get back on track with my weight‑loss goals. Life has thrown its share of challenges my way, and I’ve gained back some of the weight I once worked so hard to lose — so this is my reset moment. My journey began in 2008, when my doctor warned me about rising blood pressure and challenged me to lose ten pounds in three months. I ended up losing 26. By 2011, life had shifted again, and I recommitted to the low‑carb lifestyle that helped me feel strong and steady. And today, I’m still committed — just with new tools, new wisdom, and a whole lot more grace for myself. I live just outside New Orleans, deep in sweet Cajun Country, where we hunt, fish, “make groceries,” and enjoy the simple things. I exercise three times a week and practice relaxing on the off days. My immediate goal is to lose 15 pounds, and I’m focused on moving forward with intention and consistency. So pull up a chair and stay a spell — this blog follows my low‑carb journey, my Southern roots, and now, my Wegovy pill adventure.

Tis da Season.....

I had fun at our ladies "Christian Connection" social today. Lots of great food (YES, low carb too), too many to mention, but I brought the chicken salad, on white and wheat bread !

I had the chicken salad again for supper. So today, I did not count my carbs, but I watched what I ate and sampled a bit of what everyone had. Down south, we're known for our cooking, and it was oh-so-delicious !

Whats your favorite low-carb holiday food ?

I really like LC pumpkin pie (usually without the crust or with a LC pecan crust). Mmm mmm good! :)

I am picturing the pumpkin pie with out a crust -= would be like having a hamburer without the bun LOL, yes, It SOUNDS delicious. :)

Add dollup of WHIPPED CREAM, set me a plate, and i'll be there !

Ewwww pumpkin pie? I have no idea what that would be like but it sounds terrible hahahaha Meat pies all the way!

Actually my fav lc recipe would have to be shepherds pie (with cauliflower instead of potato of course). Delicious! I might make it again soon :)

Oh My GOSH ! It's AUDIENCE FOOD FIGHT TIME !!... I want you BOTH to submit your recipes (for the pumpkin crustless pie AND the shepards pie. We seriously need to start a recipe box here. What do yall think ?

The only thing I did differently was to substitute stevia for the Splenda.
