This blog is dedicated to the low-carb menu challenge presented by Jimmy Moore. I'm living the Louisiana low carb lifestyle, where low-carb is the new way to go ! I live southwest of New Orleans, Louisiana....have three awesome kids. We are deep down in the heart of sweet Cajun Country, where we kick back and relax, go hunting, fishing, or make groceries! My doctor told me that my blood pressure numbers were getting too high, so I had to loose weight. She challenged me with ten pounds in three months. That was October 7, 2008. I lost 26 pounds !!! In February of 2011, I found that I had gained a few pounds more than I would have liked, weighing in at 170 pounds. I had to get back into the swing of living the low carb life again !! I am loving the 'low-carb' style and wish to contiue it . I exercise three times a week at the gym, and off the 'off' days, I learn to RELAX !! November 2011, finds me in different circumstances -- a new lifestyle, great community of friends and a challenge to keep that 45 pounds that I lost OFF. It's Baseball Season !!



It's officially baseball season in our household. I'm embracing it this year.. I'm not the typical ball mom, as our oldest is 23, our youngest is almost 11. I just turned 48 ! Where does the time fly ??

Most of the baseball moms in our group are ten years younger than I am, and I kind of feel out of place. They bring along their toddlers, strollers and Mc Donalds... I'm the one you find going around the walking path for an hour while practice is going on, then settling into my own chair for a great low carb snack/lunch, sipping on very cold water.

Our son has moved 'up' in the age bracket, now playing with the 11-12 year old 'franchise' team,-- members being from various locations around the parish. His schedule is very demanding ; practice on wednesday and thursday and sunday night, for now.

So where does this leave me ? I'm at a ball park for hours... so I can either be bored out of my mind, or EMBRACE it. I chose the latter. I plan on using walking path as much as possible.. I noticed a basketball hoop, along the back of the ball park. Should I bring my own ball and start my own league ? :) LOL

I'm always looking for the opportunity kick into spring.. its here, .. seems baseball season and spring are one in the same... at least try telling that to a bunch of tweens at the ball park !!

Enjoy your outdoor time as much as you can. If you have the opportunity to walk, run, etc, then do it @! Always bring a change of clothes, extra layers for evening, and lots of low carb snacks/food and WATER to hydrate !!

It's Officially Springtime !!



Spring has Sprung !! But don't tell that to anyone in the Big Easy who experienced hours of rainfall last night followed by a cold front. There is actually snow flurries reported in Alexandria, Louisiana today !!

It's been quite a busy weekend. We had a birthday party for our son. Try dieting with five 11 year olds wanting pizza, cookie cake, chips, hot dogs and dip !!

Today, I went to the gym and worked out for almost two hours, all cardio. Treadmill, exercise bike and elleptical machine.

My weight loss is down a whopping 1 1/2 pounds. (Better than nothing right ?).. this grand total took all of three weeks to achieve. I just wish it would come off QUICKER, but then again, isn't that every low carber's dreams ??

To avoid all the birthday goodies being eaten around me, I opted for a chicken salad sanwich on whole wheat. (Remember, absolutely NO DOUBLE FIBER bread for this gal !)

This week proves to be a busy one. Our son made the local baseball team, so there will be practices, a scrimmage on Wednesday, etc.

My 30th high school reunion is this Saturday, I need something to wear !! Should I dress for summer or winter Ha.. need to purchase a new dress too !

So Spring has Sprung in New Orleans, At least the scale has not....

READ the fine print !!



Found out today, those little carbs have been sneaking up on me !!

My favorite 'mints' are Certs. You know those little Breath mints , RIGHT...

I purchase wintergreen "WITH RETSYN'.. I always thought RETSYN was something sugar free ! Retsyn is a trademarked name for a combination of copper gluconate and partially hydrogenated cottonseed oil, held by Cadbury Adams (a division of Cadbury Schweppes). It is an ingredient in Certs, Certs Cool Mint Drops, and Certs Power Mints.

According to a Pfizer FAQ Page, Retsyn, in addition to the flavor, is responsible for the efficacy of Certs against breath odors. The hydrogenated vegetable oil and the copper gluconate absorb odors in the mouth. The copper gluconate is also responsible for Retsyn's green color.


After examining the package carefully this morning, ONE mint = 2 carbs.. *yikes*...

I just MAY have the freshest breath at the gym, but watch out for CERTS !!

I eat them like candy... SO BEWARE the CARBS are out to get you !!

Add "1" to the Loss Column !


Finally after three weeks of trying, I lost my first pound !!

WOW, it seemed like forever. Perhaps, I just needed to let all of those medications get out of my body first ? Who knows ? But I'll take it where I can get it.

I worked out at the gym for two hours on Sunday and 1 1/2 hours on Monday.

I bbq'd chicken breast, and legs, hamburgers and hot dogs on Sunday.

Yesterday, I turned the meat from the chicken breast into chicken salad. Yummy !!

One thing I learned about eating. If u do NOT need double fiber bread, don't eat it. That was the major cause of my irritable bowel syndrome. I was making my intestines work overtime, trying to churn away at the double fiber.

I'm taking the day OFF from exercising today. Trying to think of other low carb creative recipes for the rest of the chicken.

One down, nine more to go, at this pace, I'll be 10 pounds less by summertime LOL

I Fell off the wagon ... again !





Hi ! Been a while since I personally blogged, so I cannot even tell you if anyone is out there reading this. If you are, I would appreciate your support !

I recently gained back 10 of the 35 pounds I've been able to keep off for the last
1 1/2 years. I could blame it on the medications I recently took for Irritable Bowel Syndrome and Menopause. Nothing like being diagnosed as having 'hot flashes, and irritable bowels !'. Makes one want to puke.

For the last two weeks I've tried going back on my low carb diet to no avail. I'm weighing in at 144 pounds now. Remember at 5' 4" and a bloated-as-all-get-out tummy to prove it.

I'm exercising and doing every RIGHT. So, I'm stuck in Limbo. nada. I hope someone is out there that can provide at least a little bit of encouragement. This blog says I have 23 followers, so does anyone care ??

I know. I'm at a new 'low'.. (and its not weight). Is there anybody out there ?
