- This blog is dedicated to the low-carb menu challenge presented by Jimmy Moore. I'm living the Louisiana low carb lifestyle, where low-carb is the new way to go ! I live southwest of New Orleans, Louisiana....have three awesome kids. We are deep down in the heart of sweet Cajun Country, where we kick back and relax, go hunting, fishing, or make groceries! My doctor told me that my blood pressure numbers were getting too high, so I had to loose weight. She challenged me with ten pounds in three months. That was October 7, 2008. I lost 26 pounds !!! In February of 2011, I found that I had gained a few pounds more than I would have liked, weighing in at 170 pounds. I had to get back into the swing of living the low carb life again !! I am loving the 'low-carb' style and wish to contiue it . I exercise three times a week at the gym, and off the 'off' days, I learn to RELAX !! November 2011, finds me in different circumstances -- a new lifestyle, great community of friends and a challenge to keep that 45 pounds that I lost OFF. For breakfast I had Jimmie Dean Sausage and one slice of wheat bread.
This afternoon, I had a cup of string beans cooked with two slices of cut up Ham and smothered with onions. It was good ! I also had a hamburger pattie on my homemade sesame bread slices.
A Diet Popsicle rounded off the evening :)
I worked out for 1 1/2 hours at the gym today. They are closed tomorrow AND New Years Day, So I'm going to have to do some exercises at home to make up the difference.
Yall got your blacked eyed peas and cabbage ready for New Years yet ?

Today, I went diligently to the gym, worked out for 1 hr, 45 minutes, AND I FINALLY LOST A POUND !!! YEAH !!!... I just KNEW if I were to be faithful and work out more, this would happen, AND it happened during Christmas week :))) Wheeeeeeee....
So now, I'm down to 143 pounds... That last pound was HARD to come off, took me two weeks, but I did it !!
Today, I had my first "Southwest Salad" with Grilled Chicken from Mc Donald's' (Tangy, warm, cilatro-lime glazed chicken (grilled or crispy), poblano peppers, roasted tomatoes, crispy chili-lime tortilla strips, black beans, fire-roasted corn, cheddar-jack cheese, lime 1/4 slice, ).. Well, in my salad, there were NO tomatoes at all, and those black beans, I tossed them out. The tortilla strips were more like taco shells to me... but it WAS a great salad.. Total Carbohydrate 30g so says this website

It was the best tasting salad I had in a long time. I did drizzle Ranch dressing on top, so add another 8 carbs.
I also had 1/2 of my usual ham and cheese sandwich on wheat toast.
I was out and about today, very pretty day, with beautiful weather.
Tonight, I had the guilt-free pleasure of eating one Hershey Special Dark Chocolate Miniature
(5 carbs) it was GOOD !!

For lunch, I had two thin slices of my Sesame Bread that I made yesterday in the bread machine. To top off the sandwich, I put slices of turkey breast and ham, along with mayo, mustard and pickles. I had a cup of mixed "steamed' veggies. Tonite, I had a cup of Breyers low carb ice cream.
The weather has changed, much cooler today ! I'll have to exercise more indoors today.
The kids still have *another* week off of school. Weigh in day tomorrow at the gym. At least during this Christmas week, I exercised more, so we'll see if it paid off !!

Not so "Sesame" Bread !!
The book is based on a ONE POUND breadmaker, whereas my bread machine makes a 1.5 to 2 lb loaf. Her book called for simply 'doubling' the recipe given to make a two pound loaf. Sounds easy enough right ? I followed the recipe (doubling the amounts), and here is the final product :
It looks delish and all, but it is very dense and way too many sesame. A friend of mine just suggested making the 1 lb loaf recipe and put it in my machine that way and run it through the cycle. Since I am new to this , I thought I HAD to fit the recipe.. 'to fit the machine'., thus the final product.
On an upward note, my 84 year old father in law graciously bestowed this wonderful hand crafted bread slicer to me :) I got the instructions of how to make the slicer off of the internet.
My delicious low carb sesame sliced bread ready to be eaten !!
I think next time I will stick with the one pound sesame recipe, then put it in the bread machine (even though the machine is for 1.5 to a two pound loaf.)
For breakfast today, I had slices of bacon on wheat toast with lettuce and tomato.

I have to CONFESS, I cheated too !!
She first tempted me with the nuts and cheese and sausage (a low carber's delight)... but then the smells from the oven -- Oh my ! Ham, sweet potato, warm buns, & baked beans... HELLO ! T-e-m-p-a-t-a-t-i-o-n set in and THIS Louisiana gal just HAD to sample everythang. So, I must confess, along with everyone else doing their low carb blogs.. I cheated too !
I went back to he 'low carb' lifestyle by having two hamburger patties for dinner last nite.
On a good note, I did go to the gym & exercised for one hour yesterday morning AND I walked two miles to my Leslie Sansone dvd.

Be Wise.... Exercise !!
When I weighed in, the guy at the gym would not even give me the 1/2 pound I thought I had lost ! LOL. So, lesson learned. even if I can't go to the gym, there is always SOMETHING I can do at home to exercise.
I have the kids home for TWO WEEKS Christmas break, AND the gym has less hours open because of the Christmas holiday, So I need to do some kind of exercise at home.... I know, woulda, coulda, shoulda... ;( I have only myself to blame.
For lunch today, I had three slices of bacon on wheat bread, lettuce and tomato. Tonight, I am fixing tuna fish and egg salad.
I watched the movie "7 Pounds, with Will Smith"... just feel so sad... VERY dramatic movie.

I like this advice. Although I exercise more than 30 minutes a day, and pay attention EVERY DAY to nutrition. The Long-Term Mindset ? I take it one day at a time. Support of other people is nice, but I have to be realistic. Eating low-carb IS a lifestyle, and it is NOT for everyone.
I think the one word I hear my friends saying is how 'disciplined' I am in eating. The other thing I hear is how 'low will you go ?"... I have not found that answer just yet. However, I'm sure there will come a time when the weight loss WILL tamper off, and I'll be at a point where I will feel comfortable in eating more than 60 carbs per day.
I think I will never look at food again in such a way as I have in the past 2 1/2 months ! I look at EVERY nutrition label, for ALL of the hidden signs of sugars, their different names, etc. I look for the amount of CARBS. I examine a product like someone examines a crime scene. I take forever it seems at the supermarket when looking for new low carb foods to eat. I try to post them HERE so others can benefit.
Just how low will you go ? How do you know when you get there ? Have others been telling you things about your weight loss ?

"White" On -- No Way !!
For Lunch today, I had Chicken salad on WHITE BREAD (26 carbs). Was making hubby a sandwich and forgot I made mine on white instead of wheat *ugh ! Best dern tasting sandwich I had since I ate the roll at Thanksgiving !
I worked out for an hour and a half at the gym this morn.
It's 80 degrees this afternoon as I type this... time for a cool refreshing glass of Diet Coke over ice.
Tonight, I had a hamburger patti on two slices of wheat bread, with a slice of cheese.
Total for today : 70 carbs.. lesson learned -- ANYTHING WHITE = NO ~!~~

CARBi-licious ! (Tell me about your low-carb menu challenge !!)
Today for breakfast I had three Jimmy Dean Sausage Patti Links on wheat toast. For lunch I had a slice of wheat toast with a boiled egg sliced on top, mayo, tomato, Kraft cheese & pepperjack string cheese. I also had Hormel Pepperoni Slices and Hormel Canadian Style Bacon slices as a treat.
It's already after 6 pm, and I'm REALLY not that hungry, so I may just not eat anything tonite. Although that Beyer's low carb ice cream sure does sound GOOD :) Ok : I caved in and had some Smartfood popcorn

Back In the "Shape" of Thangs ...
I worked out at the gym for two hours this morn. Ellipticial, treadmill & bicycle , 20 min each, the rest was on the weight machines.
I lost two pounds in a week ! I'm now down to 144, for a grand total of 20 pounds, since Oct. 7th. 2 mos, one week.
For lunch I had ham, cheese on 2 slices of wheat toast. For supper I had Underwood deviled ham with two boiled eggs, on one slice of wheat. I had a cup of Green Giant "Steamers' veggies, 8 carbs and One pizza roll (8 carbs ), pepperjack string cheese. and a Fuze to drink. Total carbs for today... 43 :)

Diet coke & water to drink today.
Total carbs for today, 28.
Weigh in day tomorrow . Back to the gym (routine).
Went Christmas shopping to get last minute presents.

Takin It Easy...
I DON"T feel like myself today. I think I may have either exercised too much yesterday, or I'm beginning to come down with something. I had to take a Zyrtec-D, as my sinus problems gone awry today. Even when I tried putting on makeup , you could STILL see the bagginess under my eyes ! My eyes keep watering so Its definitely allergy/sinus related. I'm about to take some ibuprofen, as the sinuses keep draining down to my throat now, and I have a sinus headache.. SO how was your day ?? I did not even get to exercise...and I cant even finish my ham and turkey salad tonite =(

For breakfast I had two eggs on one slice of wheat toast. For lunch I had lettuce, tomato, turkey, ham and cheese on two slices of wheat toast. For supper, I had a salad consisting of different cheeses, pepperoni slices, bacon, Kraft dressing, tomato, lettuce, ham and turkey.
On a bright note, I DID see that Jimmy is checking out our blogs and he even left a comment on mine the other day !! Its SO nice of him. Now lets get him doing to do and audio/or you tube blog on US, doing OUR BLOG MENUS...

Getting Fit with Leslie Sansone !
Leslie Sansone: Walk at Home - 5 Mile Fat Burning Walk (2008)
Today I walked 4 of the 5 miles with Leslie ! I like her newest video, You exercise each mile in a short 12 minute mile. In the first mile she is alone. I've never seen her alone in her video before, I really liked it this way. One lady gave her testimony of how she lost over 100 pounds, and how she did it at 'her own pace, and without expectations.'.... I'm a bit different, I NEED goals, and expectations. I do agree that I do exercising at 'my own pace' , and the only diet that EVER worked for me IS LOW CARB !!
Speaking of carbs ....My carb total for today was 48.
I had a mesquite chicken breast. It was absolutely delicious and only four carbs. I put the chicken breast on one piece of wheat toast (cut in half) with lettuce , tomato and mustard and mayo.
For supper, I had bacon, lettuce and tomato, mayo on two slices of wheat. I had string cheeses (pepper jack, my fav ! and mozarella).
There are a few snowmen still standing in our neighborhood from the beautiful snow fall we had yesterday. SUCH A BLESSING TO SEE !!
You know what they say about Louisiana weather , huh ?? If there is now on Dec 11, then we'll probably have an 80 degree Christmas !! YES ONLY in New Orleans !!

It's beginning to look a LOT like Christmas.. I found ONE Christmas pressie under our tree, and guess who its for.. ME :) I can't WAIT till Christmas to open it up ! LOL.
I'm getting ready to make breakfast , consisting of one piece of wheat bread ,two eggs, & cheese my 'omelet'. so about a 16 carb breakfast !

Hot and Cold..
This evening I had catfish and one french fry (ok, had to splurge here, as it was very tempting)
I also had a lettuce and tomato salad with a drizzle of kraft dressing (oil & vinegar) and some bacon bits.
Its been a very crappy rainy, COLD day.
I worked out at the gym this morn for 1 hour 45 minutes... I wore workout clothes, includes shorts and a t.. well in less than 20 minutes, it cooled down some 20 degrees thats Louisiana for ya.

I had the chicken salad again for supper. So today, I did not count my carbs, but I watched what I ate and sampled a bit of what everyone had. Down south, we're known for our cooking, and it was oh-so-delicious !

On The "Weigh" Down ...
I was beginning to wonder if I was exercising enough at home on my day off from the gym... guess I have not been doing too bad !
For lunch today, I had a Subway Salad (12 - 14 carbs) and two packs of small crackers on the side (4 carbs).
At the gym I exercised on the treadmill machine, the elliptical, and the bicycle for 20 minutes each = 1 hour. Then, I worked on the weight machines for another 45 minutes. I FEEL GREAT !!
Weigh in days are always scary... When I began my weight loss on 10/07/2008, I was 164 lbs. Today I weighed in at 146 -- for a total of 18 pounds in 2 months :) My goal is to be 140 pounds by Christmas -- Who knows , huh ?? LOL.
For supper I had fresh steamed broccilli & chicken salad sandwich. For a grand total of 52 carbs :)

Onto Better Thangs...
Onto BETTER things. The weather has been clear and crisp, but COLD.. I must admit that My exercise has slowed down a bit, but I will be better at it today ! I'm generally an 'outside person'.. love to walk, to explore nature, etc. Gimme butterflies and blue skies ANYTIME.. (sounds like the name for a new song title -- huh ?) LOL.
For lunch today, I had a nice salad consisting of crispy lettuce, tomatoes, pepper jack & mozzarella cheese, pepperoni slices, and yes, a cut up hot dog !! On top was drizzled Kraft Zesty Italian Marinade and Salad Dressing.
I hit the local CVS for their Sunday sale, The Energizer batteries (with coupons) were the "hot item' of the day.
Today I exercised by walking 3 miles to a Leslie Sansone DVD, and rode my bicycle with my son one mile around our town.
For dinner, I had 1/2 cup mixed veggies, pepperoni slices, turkey breast, ham and a diet coke. Might even splurge on a sugar free popsicle later :)

There's a New Kid In Town -- Mc Donald's
Who would have thought, their Sausage Patti and Eggs would total 16 carbs combined ! To add insult to injury, I had TWO servings of the eggs (2 carbs) and ONE of the Sausage patti -- a whopping 14 carbs !! So my total carb intake for BREAKFAST ALONE WAS 16 carbs.... I nearly fainted when I just read this !!

For supper, I had roast beef tips on two slices of wheat bread (8 carb per slice), so this totaled up to be rough estimate of 20 carbs, (YES, I had the gravy too !)
So, 36+ carbs persay, is not a BAD total, but this is only for two meals !

For lunch I had the ham, cheese & turkey sandwich on wheat bread. For supper I had two eggs, and a 1/2 cup of mixed veggies !! YES ! mixed veggies and eggs... I ALMOST was tempted to throw the veggies in with the eggs and make an OMELET, but opted to just have them on the side.

Lo Carb Shopping / Makin' Groceries Southern Style !!

Its been pretty rainy and cold today with a brisk breeze. I went to the gym to work out today.
Back to Wally World. I think I may create my own "low carb shopping list'' to let yall know what exactly I like to eat that helps in the low carb world out there . I'll have to post that another day.
I met another low carb person at Wal Mart today. It was good to speak to her, even if just for a few minutes. Even though I've been 'low-carbin' for two months now.. it's different when you meet people like yourself who have successfully lost weight by doing this type of diet. She was very helping in guiding my way around the place and even pointed out a few items that I could not find.
I did not eat much today. Just was not in the mood. Tonight was our Christmas tree lighting at our local park, so I spent a couple of hours out on such a beautiful crispy cold night. They were dispersing hot chocolate, I SO wanted some, but when I looked at the CARBS, I had to pass. Then I thought that someone out there MUST make a low carb/sugar free hot chocolate, so next time, I am going to put that on my list and look for it as well.
Do yall have a 'grocery type' list you'd like to share, OR some of your fav low-carb foods/drinks that you can get at the local supermarket, you'd like to give us a 'head's up' ON ?? Please post below :)

Walkin Away the Pounds !! Exercising & Super Foods !!

This took about an hour. Anyone that can keep up with Leslie, is great in my book !
I ate at our local Chinese restaurant. It was a 'buffet' type meal, where you pick what you want to eat. I had a small slice of meatloaf, some of those steamed veggies, a couple of different kinds of chicken (that was not sweet or breaded), and a diet coke. My fortune cookie said for me to learn how to say the word "Doctor'' in Chinese. It also, instead of giving me a fortune, gave me great powerball numbers and said 'lady luck is on your side." So , of course, I had to purchase a lottery ticket, using those numbers. We'll see If I'm a millionaire before morning !

I really really like Denise Austin... as a matter of fact.. I was a follower of hers for approx. 25 years ! She was on Lifetime TV it seemed like forever, and one day last year... boop, she was gone ! Just like that, no mention, nada. Living the Low Carb Challenge

This is in response to Jimmy Moore's challenge of posting our Low Carb meals online. So here it is :) I don't count calories, I count carbs !!
For Lunch I had : Del Monte mixed veggies, Ham & Cheese on Wheat.
For supper I had a Hamburger patti (homemade) with a slice of Kraft cheese on top.
I generally go to the gym three times a week. I do the treadmill, elliptical, and bicycle. I also work out on the weight machines. (no free weights)
I do not eat breakfast usually. Just not hungry in the morning. I eat around 11 am, and then later in the afternoon.
I drink lots of water, and try to use those single pack mixes to give the water some flavor. Every now and then I throw in a Diet Coke.
My most recent purchase was a bread machine. Now that I have all of the ingredients for Atkins low carb bread.. I cannot wait to try it out. My goal is to make my own 3 - 5 carb per slice bread.
