🌾 Welcome to My Low‑Carb Life As of January 2026, I’ve started a new chapter: I recently began the GLP‑1 Wegovy pill to help me get back on track with my weight‑loss goals. Life has thrown its share of challenges my way, and I’ve gained back some of the weight I once worked so hard to lose — so this is my reset moment. My journey began in 2008, when my doctor warned me about rising blood pressure and challenged me to lose ten pounds in three months. I ended up losing 26. By 2011, life had shifted again, and I recommitted to the low‑carb lifestyle that helped me feel strong and steady. And today, I’m still committed — just with new tools, new wisdom, and a whole lot more grace for myself. I live just outside New Orleans, deep in sweet Cajun Country, where we hunt, fish, “make groceries,” and enjoy the simple things. I exercise three times a week and practice relaxing on the off days. My immediate goal is to lose 15 pounds, and I’m focused on moving forward with intention and consistency. So pull up a chair and stay a spell — this blog follows my low‑carb journey, my Southern roots, and now, my Wegovy pill adventure.

Lunch & Dinner -- anyone ??

Dinner


I'm SO ready for today's lunch. My homemade bread machine low carb bread, romaine lettuce, tomato, pickles, chicken breast & Kraft mozzarella cheese slices. For dessert : 100 calorie cheeto puffs and cantaloupe slices. My bread will be adorned with Hickory Farms Sweet Hot Mustard.

Its quite a pleasant morning, temps in the low 70's, sun is trying to peek through here.

For dinner, I had mesquite Chicken bites (skinless boneless pieces), Lettuce & tomato salad with Kraft dressing, and some fresh snap beans I purchased from the farmer's market over the weekend smothered in onions and ham. Bon Appetit !!

Your menus sound great. And you illustrate something I've noticed with other LC blogs. Allowing ourselves to experience the joy of eating good food. Satisfying food with lots of fat. Keep up the good work! I've been eating a lot of hamburgers lately using lettuce for the bun. It works great, and I think it's the onion and mayo and mustard that make it tastes so wonderful too. Very delicious and very satisfying.

Its a LOT of food for me. I dont think I even finished 'dinner' plate lol. I decided to try different lettuce and tomato varieties and to incorporate FRUITS. It was one iem I was sticking away from for several months, but now that I'm almost near my weight loss goal, and I was feeling bad last week... I'm encouraging them onto the plate. Thanks for all of the inspiration .. I need feedback from everyone. I' NOT a food artist, so the pics are real, and how I plsce the food.
