This blog is dedicated to the low-carb menu challenge presented by Jimmy Moore. I'm living the Louisiana low carb lifestyle, where low-carb is the new way to go ! I live southwest of New Orleans, Louisiana....have three awesome kids. We are deep down in the heart of sweet Cajun Country, where we kick back and relax, go hunting, fishing, or make groceries! My doctor told me that my blood pressure numbers were getting too high, so I had to loose weight. She challenged me with ten pounds in three months. That was October 7, 2008. I lost 26 pounds !!! In February of 2011, I found that I had gained a few pounds more than I would have liked, weighing in at 170 pounds. I had to get back into the swing of living the low carb life again !! I am loving the 'low-carb' style and wish to contiue it . I exercise three times a week at the gym, and off the 'off' days, I learn to RELAX !! November 2011, finds me in different circumstances -- a new lifestyle, great community of friends and a challenge to keep that 45 pounds that I lost OFF. It's My Party, and I'll Cry If I Want to !!


Today is my 47 th birthday , which I also share with Elizabeth Taylor, Chelsea Clinton & Henry Wadsworth Longfellow.




I was scheduled to be in Biloxi with my dear husband this Friday and Saturday night.. but of course, the bet laid plans are usually NONE. Two days ago, I started coughing all day and night. I ended up spending a couple of hours at the doctor's office today. I have a very bad upper respiratory infection. I'm on an antibiotic and something to make the chest congestion cough up


.


On a good note, when at the doctors office today, my blood pressure was 110/78. I weighed 133 pounds. So things are starting to look better. I think the reason I gained those two pounds last time I weighed myself was because I weighed myself AFTER I excerised, AND after I drank three 16.9 ounce bottles of water.




Also, yesterday was my brother's liver surgery. It lasted almost 9 hours. He is resting as I call it 'comfortably numb', he has about another three weeks in the hospital. Please continue to pray for his recovery.




Food I ate today :




Catfish, veggies and a bun.




Seafood gumbo , potato salad and a Diet Rite Soda.




To die for -- I purchased a birthday cake and at a BIG slice.




So, for today, I was officially OFF of my low carb diet. Its been a week since I exercised, so when I feel up to it, I will start walking again.


Oh well, I just need to find my 'niche', my 'groove', and get back into the swing of things. I just feel so darn LOUSY> Hey, its MY birthday party and I'll cry if I want to ! lol

The Strands of Time..


What a difference a single week can make ! Ash Wednesday changes the mood from revelry to recovery. No one understands this better than New Orleanians (and possibly, new mothers.)Today, most stand silently at Mass -- a time for introspection and self-deprivation that comes to this mostly Catholic city with the arrival of Lent.


This journey is a time for doing penance from the dietary excess, oh wait -- aren't we already doing that ? Being low-carb fits in perfectly with the Lenten season.


I'll try to think of many "Lenten low carb dishes'' and conjure up a few with my Southern twang taste. Seafood, no doubt. Veggies for sure. Let's see what we can 'dish' out during our Lenten
journey. I'll have to check the carb count on the recipes shown below.

A Scenic Bayou-cise !!








I just got back from a refreshing 2.5 mile walk along the levee.











It was nice to see the environmental scape as I passed along.

Broccili with cheese (Green Giant Steamers )

Strawberries with whipped cream

Mixed meat sandwich (turkey, ham & cheese) on my toasted low carb breadmachine bread. (Doesn't my bread look like a pair of hot pants ?? LOL )

I am HUNGRY !!

For supper, I ate 1/2 cup corn, one slice tomato with hillshire farm cheese on top. Hillshire farm summer sausages cut up. a bag of 100 calorie popcorn and 1/2 slice of my low carb breadmachine bread.

Monday : Bon Appetit !!


For Lunch today, I ate two sunny side up eggs and a bacon , lettuce and tomato sandwich on my low carb breadmachine bread.

Dinner, one cheeseburger patti and five skinless boneless char broiled chicken nuggets, with 2 tablespoons of peas and a little bit of mashed potato.

I exercised for one hour with 'Fit TV' (cable channel) and walked 20 minutes on the treadmill.

Lundi Gras Kicks Festivals into High Gear !!!


What ELSE could I have crammed into this overflowing weekend ? Well, on Sunday, Oscar and Bacchus went head-to-head, but thanks to VCRs, DVRs or whatever acronym you hold dear, I could have my parade and starlets, too.

I have to say that after our venture on St. Charles Ave. last nite, that its probably the ONLY place on Earth that allows PRIVATE PORT-O-LETS on neutral grounds !! I passed by hundreds of these port-o-potty's with LOCKS ON THEM. They all had "PRIVATE" signs on the doors above the locks. Some Entrepreneur even thought of charging $1 to use it. Said it was for CHARITY. Some people even charged you to let you park in their yard !! Others put garbage cans on public streets to 'save a spot' for friends and family. LOL ONLY in New Orleans.

Fat Monday is getting as wild as Fat Tuesday in the Greater New Orleans area with parades, music and revelry starting at 10 a.m. and stretching on into the night.

You gain a few -- loose a few.





Went to the gym & worked out for two hours this morning. I weighed myself and it said I had gained two pounds !! GRRRRR.

I guess since I had not been to the gym since last Wednesday, it is starting to show. This week I upped my carb intake because I thought i was good I had lost the 30 pounds... well, I'm going to have to reevaluate THAT train of thought.

For todays lunch, I had tuna fish on my homemade low carb bread & some ground meat cooked with egglplant.

Quite a combo aye ?

The weather is beautiful and parades are rolling today. Yall have a Blessed One !@

Tonight we went to the Bacchus Parade in New Orleans, double decker floats & throws ! I got hit in the side of the head by my eye with a bunch of beads about three feet in length. They knocked me off of my feet and I was dazed a wee bit. We had quite a haul of beads and stuffed animals. Our kids enjoyed their first REAL night time parade in UPTOWN in The Big Easy.
On the way back home, we stopped by Wendy's. I had a double hamburger patti cut up into one of the $1.50 salads on the side. It was pretty tasty.
We got in more exercise, as we had to actually WALK to our car and the parade route.

"Laissez Les Bon Temps Roulez".. its Mardi Gras time !!


"Laissez Les Bon Temps Roulez"
Let the good times Roll ! It's Mardi Gras weekend here in the Big Easy !!!! Time for some King Cake, Hot Beignets, po-boys.... Oh wait ! That's a low carber's nightmare :))
The streets will be rolling with Mardi Gras floats and revelers this weekend. Should be a wonderful way to pass a good time :) Exercise can include lots of WALKING, chasing the floats for beads, picking up beads and doubloons off of the ground AND tossing the beads to other people way back in the crowd, once you have enough for yourself. You'll probably have the chance to park far away from the parade route, so that's a plus in my book to get in that extra bit of WALKING.

Its a beautiful sunny morning here. I'm finally getting myself pulled together.
I have a massage scheduled and I'm looking forward to that. My birthday is next Friday, so I hope to have great weather and a good time next weekend :) How much more can this southern gal ask for ? :))
For breakfast, I had four Jimmie Dean sausages on one slice of wheat toast. It is supposed to be weigh in day at the gym, but since I"m not going there today, I will just exercise at home. I think everyone needs a 'break' from the gym and do something different.
For lunch I ate double hamburger meat from Mc Donald's on wheat bread with my 100 calorie pouch of Cheeto Puffs.

Life is SO sweet....


Life is so sweet sometimes... that I can almost taste it. Sometimes it is like pure cocoa, refined, and beautiful. At other times, it can become bittersweet, where you just want to take what you've been given and spit it out, never to have it to return to your mouth again.

I've looked at my life, my accomplishments, etc. I've also looked at my trials and tribulations... or I should say -- 'others' trials and tribulations..' and I shake my head in amazement at what makes people tick sometimes.

I've come a bit down to Earth since last night. I received news that my 50 year old brother, who was diagnosed with stage four colon cancer awhile back , needs an operation to get the tumors out of his liver. This consists of a 5 -7 hour operation, and then they will 'resection it'. My goodness. Its almost unbearable thinking about it.

I love my brother to death. He is the one 'constant' in my life that I can rely on. He is my 'rock'.
Nothing can make this 'feeling' go away. I keep wondering if there is something more I can do, to give him the 'encouragement' and prayer along the way that I sought when I was loosing my weight. I feel somehow I have failed him.

We can go along in life without acknowledging the good that others bring to our daily lives. We acknowledge our own accomplishments, but really -- I'd give it all back just to make him feel a wee bit better.

Its just when things get dark and heavy, I need something to hang onto, his hand in mine, and together we can get through his surgery, knowing he gave it his all, and we were there for each other.

I cannot let another minute go by without wondering if all that I do is ever 'enough'. I do a lot for my family and for myself, but just how much do I REALLY do for others ? I'm going to have to evaluate that with continuous prayer.

Sometimes, Big Easy on Low Carb ISN'T SO EASY.

Mixed Blessings...





I would like to thank everyone for their ideas about what I can do since I hit the 30 pound weight loss and the "Crossroads" place where I am. I am still thinking about this very much. I did up the carbs a bit yesterday, allowing for some potato salad (have not had that in ages). I jut found my stomach feels more bloated than usual, but then who knows ? It may just be a 'girl thang.'

Today I worked out for two hours at the gym.


Lunch : I had a mixed meat (turkey, ham, chicken) sandwich on my low carb homemade bread.


For supper, bacon & mayo on whole wheat toast.


Not much exciting today. (I can stand a week without excitement).


I continue to monitor our son's progress with his meds (still on three as we speak.)

Only upside is that he goes to bed rather EARLY, giving me some much needed time to myself.


I saw two good movies over the weekend : The Secret Life of Bees and Nights in Rodanthe (gals this is a MUST -SEE movie .. Richard Gere :P )

At a Crossroad....can anybody please help ???


So, I've reached the point of loosing 30 pounds.. now what ?

At 134, I think that is quite commendable. However, I cannot decide just where to go from here. I do know that I need to keep up with the low carb regime, but perhaps adding a few more fruits and less starchy carb veggies. Is it time to explore other options ? I think so.

Now that I'm 'mastered' the technique to 'get the weight' off -- what now ?? I really have no desire to go below 130 pounds. So , I guess the next technique would be 'maintaining'.. the 'good weight ?'' I'm not so sure where to begin.

A few things I would like to do would be :

(1) Not go below 130 pounds.
(2) Keep the weight OFF, but not go above 140.
(3) Learn how to eat better (either adding more carbs,) but which ones and how ?
(4) Exercising to get the muscles toned where the weight came off the most and SHOWS.. (neck area, upper back arms, etc).

Is there anybody out there that has REACHED their weight loss goals, and then asked, NOW WHAT ? I'd sure like to talk with them. Any ideas, url's etc, to help me on this goal. I'm so excited I am where I am now, and feel so blessed. At the same time, I'm beginning on a NEW JOURNEY, and I ask for your help. Is there anybody out there ???

30 pounds -- gone !!!!! Friday the 13th... bad luck??. . NOT for me !!


Yes, today I decided to weigh in. I've lost a total of 30 pounds since Oct. 7, 2008 !!!


I now weigh 134. Whew. It took me an entire month to loose the last three pounds. I'm so excited :)


So Four months, one week = 30 pounds. Who would have thought when I started low carbing, I'd hit the 30 pound mark ??


Life IS good. LOL (thoughts of celebrating with LOTS of carbs are running rampant through my mind right now, but I'm saving THAT celebration for my birthday on Feb. 27th :)))


So what did I eat today ? For lunch, I had a mixed meat sandwich on wheat toast (turkey, ham, etc) and right now I am enjoying a very cold sugar free popsicle.


I hope everyone has a Blessed a day of Friday the 13th as I have been having.


Oh yeah, I worked out at the gym for two hours today...

Today for lunch I had :







Bacon, Lettuce & tomato on whole wheat bread; Peanuts and 100 calorie cheetos Puffs.
For supper I had Mc Donald's Southwest salad.
I took the day off today.. and did nothing special. Still trying to nurse our 9 year old back to health. He's extremely tire again tonight, so he best get to his homework while he is still awake.

One step forward, two steps back..

Just when I thought our son was getting BETTER, he is still sick with his sinus infection (cough now), so I spent the majority of the afternoon at the doctor's office and waiting for prescriptions to be filled (he's on THREE). I just want him to get well... He gets SO tired in the evening , he is in bed for 7:30 - 8:00 pm

Today, I went to the gym and worked out for an hour.

For lunch I made a hamburger patti, on my homemade bread with lettuce tomato and pickles.

For supper, I made a mixed meat sandwich consisting of turkey, ham, etc and a slice of cheese on 2 slices of wheat bread.

I"m just pooped out after this afternoon of traveling. It rained most of the day here as well, so it kinda set the mood I am in. Can you tell ??

After working out at the gym for one hour AND walking with my husband yesterday, I was too pooped to post !

He found a trail along the levee around here, beautiful scenic waterways, cypress trees, wildlife, etc.. so I decided to 'tag along' yesterday. It was a five-mile journey into the swamp there along the levee. We were dashing cow patties as we strutted along on yet another beautiful day.

He was very impressed that I could keep up with him. He's over 50 and I'm over the hill. He's
6 ft tall and I'm 5'4" and I'm very much vertically challenged.. so imagine to every three of his 'stridng steps', I'm taking ONE. But Bayoubabe had a stragetic plan in mind.... =)

My fellow blogger readers will well know by now, my secret walking weapon is my one and only Leslie Sansone DVD's I SWEAR by these. I can do FIVE MILES IN ONE HOUR with her latest dvd that is out !! So, to my husband's surprise... I WAS able to keep up with him and without too much of a sweat. On our journey back home, I passed him up and yelled to him .."OUT OF SHAPE!!" in jest. He is just now getting himself going again physically, which I applaud. He is a shift worker, so having precious time to exercise in our humid, rainy, mosquito filled atmosphere out here -- is almost null.

A Texan in da 'Big Easy".. !!!

We sat and spoke, shared stories, and well, she's just one heck of a gal :)

We had Santa Ana winds in our city today (Imagine That), and the sky was just as beautiful as Pootie :))

Cheers to this fellow lo carber. I feel blessed to have met her -- and hope to meet her again.

4 months = 28 Pounds Lost !!

It just dawned on me a moment ago, that today was my four month anniversary since I started my low-carb diet and exercise regime. On Oct, 7, 2008 I weighed in at 164 pounds..
Let's not forget the REASON I decided to go low carb. My doctor said I was going through pre-hypertension (blood pressure numbers were a bit high). AND the fact that I went through a hysterectomy on Aug. 12th, which added to the aggravation of weight gain.





January 2009


At 5' 4" I am SO vertically challenged ! Today, I weighed in at 136, for a grand total of 28 pounds lost, and I have KEPT IT OFF !!

As told in a recent blog, it took me 10 days to loose the last pound. I had a sick child at home for five days, and I had not been to the gym to exercise in that amount of time.

So as the saying goes, time to move onward. I am almost at where I want to be, but am not sure just exactly 'where' is. I really have no desire to weigh under 130 pounds, so I'll worry about that bridge when I get there. I am VERY pleased with my progress. As many have you have pointed out, a pound here, a pound there adds up eventually !

Thank you for being my virtual soul and spirit out there. It is very encouraging to have a small circle of low-carb friends from around the world.. Most of all, thank you to Jimmy Moore :)

Saturday Food Intake..


Another BEAUTIFUL day here in da Big Easy !!


For breakast I ate three eggs with four Jimmie Dean Sausage Links on a slice of low carb bread machine bread.
For lunch : a salad consisting of a few broken up Tostitos chips, lettuce, tomato, pickles, fajitas chicken slices, and a few of my kids pretzel stick. Kraft Ranch dressing to drizzle on top. On the other plate are some seamed veggies. Yummy !!
To wash it down, -- Lipton Diet Tea.

Let's Get Physical !!

It's time to get Physical ! Beautiful weather we're havin in Nawlins' today. Great day to be outside excercising. Speaking of exercising... I worked out for an hour and a half this morn, at the gym.

Takin' It Easy...


After five days at home with a sick kid, today was the day to venture out. I exercised for two hours at the gym this morning, so you can imagine my appetite.
As shown in the picture above, are the ingredients. I don't usually picture ingredients, but I think you get a better idea if you see them.
Was not in the mood for lettuce and tomato, so I added a few peanuts on the side. Of course, the sandwich is made with the low carb bread from yesterday's baking experience !
On a good note, I lexercised for two hours at the gym todday AND I lost another pound. I now weigh in at 136, but this was 10+ days with out weighing in and five of the last days with No gym workout. Hey, at least it's something , right ?

Low Carb Slow Cooking .... Today's dish -- Italian Chicken




The loaf of low carb bread I made in the bread machine this afternoon came out wonderful ! Check out the height on that puppy !
The crock pot slow cooker low carb meal consisted of veggies and skinless boneless chicken breasts. Boy those breasts were SO tender, they practically fell apart. And the flavors, oh my ! I threw in a can of Meir Glen oven fired tomatoes.. It was simply carbilicious !!! To even out the dinner plate, I had some lettuce and tomato topped with Ranch dressing !
This is my first low carb slow cooker meal.. I cant wait to try another.. What's your favorite low carb slow cooker meal ?

Oh my goodness ! I feel like such a lonesome tumbleweed.


Its been the most hectic four days of this year. (and the year's just begun !). I'm back in the saddle again. Our youngest was sick for FOUR days... yes count them. I've been w/o sleep for a majority of three of them. Did he have the flu ? Strep ? Nope. He just had a really bad sinus infection -- so bad he had fever of 103+ for the last four days that never broke. Things got so bad yesterday, that I did the suppository thang, as he was beginning to throw up. FINALLY the fever broke last night. Just how many doses of Tylenol and Motrin did he have ? I failed to count it was that many.

Guess things have a way of slowing us down, don't they ? Not only did it slow my son down (We are catching up on three days of missed schoolwork here). I have not been to the gym since last Friday ! I have been doing the treadmill when I could, but just did not muster up the energy to do the Leslie Sansone DVD's.


I plan to go to the gym tomorrow (crossing fingers here and praying he's better tomorrow enough to go to school). and I'm going to the gym Friday as well. I doubt I've lost any weight, but hey, I know I haven't gained any, so that's good, right ?


I need something to hold onto here. My sanity -- oh wait @! I think that left on the second day.


Cooking-wise.. I have a loaf of low-carb bread baking in the bread machine and a low carb recipe consisting of boneless skinless chicken breasts in the slow cooker. (Can't wait to try this as it is my FIRST low carb slow-cooker recipe. IF things come out good. I'll post pics.)
