About Me

🌾 Welcome to My Low‑Carb Life As of January 2026, I’ve started a new chapter: I recently began the GLP‑1 Wegovy pill to help me get back on track with my weight‑loss goals. Life has thrown its share of challenges my way, and I’ve gained back some of the weight I once worked so hard to lose — so this is my reset moment. My journey began in 2008, when my doctor warned me about rising blood pressure and challenged me to lose ten pounds in three months. I ended up losing 26. By 2011, life had shifted again, and I recommitted to the low‑carb lifestyle that helped me feel strong and steady. And today, I’m still committed — just with new tools, new wisdom, and a whole lot more grace for myself. I live just outside New Orleans, deep in sweet Cajun Country, where we hunt, fish, “make groceries,” and enjoy the simple things. I exercise three times a week and practice relaxing on the off days. My immediate goal is to lose 15 pounds, and I’m focused on moving forward with intention and consistency. So pull up a chair and stay a spell — this blog follows my low‑carb journey, my Southern roots, and now, my Wegovy pill adventure.

One step forward, two steps back..

Just when I thought our son was getting BETTER, he is still sick with his sinus infection (cough now), so I spent the majority of the afternoon at the doctor's office and waiting for prescriptions to be filled (he's on THREE). I just want him to get well... He gets SO tired in the evening , he is in bed for 7:30 - 8:00 pm

Today, I went to the gym and worked out for an hour.

For lunch I made a hamburger patti, on my homemade bread with lettuce tomato and pickles.

For supper, I made a mixed meat sandwich consisting of turkey, ham, etc and a slice of cheese on 2 slices of wheat bread.

I"m just pooped out after this afternoon of traveling. It rained most of the day here as well, so it kinda set the mood I am in. Can you tell ??

Hang in there sweetie! So sorry to here the doctor's report!!!!! It's got to be so distressing as a mommy to have a sick baby!!! Take care of himself and yourself. Rest!!!

Your sandwiches and fresh made low carb bread sound so great!

:hugs: and hang in there.

Hi, I just wanted to stop by and answer your questions on my blog.

You are right, there are carbs in apples. The recipe would be a suitable treat for someone who was at the stage that they were adding some carbs back in (like after induction).

GFCF stands for Gluten Free and Casein free. I have just recently discovered that I am gluten intolerant and dairy intolerant. So for a short while I have been mostly concentrating on figuring out how to eat that way and not on carbs. I will be returning to low carb by the end of the week though so I have been researching recipes that are suitable for me to eat. From now on, the recipes should be both GFCF and low carb.

Sorry to hear the little one still isn't better. My big one(he's 19-LOL) had that sinus stuff going on in January. He finally got over it, but it took awhile, 3 doctors visits and 4 different medications before he did. It is some nasty stuff going around. Rest is the best medicine. For you and him. Hang in there.
