🌾 Welcome to My Low‑Carb Life As of January 2026, I’ve started a new chapter: I recently began the GLP‑1 Wegovy pill to help me get back on track with my weight‑loss goals. Life has thrown its share of challenges my way, and I’ve gained back some of the weight I once worked so hard to lose — so this is my reset moment. My journey began in 2008, when my doctor warned me about rising blood pressure and challenged me to lose ten pounds in three months. I ended up losing 26. By 2011, life had shifted again, and I recommitted to the low‑carb lifestyle that helped me feel strong and steady. And today, I’m still committed — just with new tools, new wisdom, and a whole lot more grace for myself. I live just outside New Orleans, deep in sweet Cajun Country, where we hunt, fish, “make groceries,” and enjoy the simple things. I exercise three times a week and practice relaxing on the off days. My immediate goal is to lose 15 pounds, and I’m focused on moving forward with intention and consistency. So pull up a chair and stay a spell — this blog follows my low‑carb journey, my Southern roots, and now, my Wegovy pill adventure.

Low Carb Slow Cooking .... Today's dish -- Italian Chicken




The loaf of low carb bread I made in the bread machine this afternoon came out wonderful ! Check out the height on that puppy !
The crock pot slow cooker low carb meal consisted of veggies and skinless boneless chicken breasts. Boy those breasts were SO tender, they practically fell apart. And the flavors, oh my ! I threw in a can of Meir Glen oven fired tomatoes.. It was simply carbilicious !!! To even out the dinner plate, I had some lettuce and tomato topped with Ranch dressing !
This is my first low carb slow cooker meal.. I cant wait to try another.. What's your favorite low carb slow cooker meal ?

We love a good chuck roast - for slow cookin'.

I also really like making hearty stocks in our crock pot. Mmmm. They're a great base for LC veggie soup.

Hmm. I've heard of crock pots and slow cooking but never really looked into it. it looks like it's a great way to cook a great meal. Thanks for sharing!

Yeah, you would think its a whole new science or something ? If you google or search on Amazon, or just search there are tons of low carb slow cooker recipes and books out there for the same.

I had enough for four small portions for me. I froze them.. Yummy !!

Babybabe, my favorite slow cooking low carb recipe is the one that I can share at a friend;s house! So next time I am in your neck of the woods would you care to share? I have a funny, at least in my opinion, saying! In my country we say " Eat a hearty breakfast, then go to your friend's house and share a lunch with him or her, and give a dinner to an enemy! But Jewish people say " Eat a hearty breakfast, share a nice lucnh with a friend, snatch away a dinner form an enemy and eat it for breakfast!
