🌾 Welcome to My Low‑Carb Life As of January 2026, I’ve started a new chapter: I recently began the GLP‑1 Wegovy pill to help me get back on track with my weight‑loss goals. Life has thrown its share of challenges my way, and I’ve gained back some of the weight I once worked so hard to lose — so this is my reset moment. My journey began in 2008, when my doctor warned me about rising blood pressure and challenged me to lose ten pounds in three months. I ended up losing 26. By 2011, life had shifted again, and I recommitted to the low‑carb lifestyle that helped me feel strong and steady. And today, I’m still committed — just with new tools, new wisdom, and a whole lot more grace for myself. I live just outside New Orleans, deep in sweet Cajun Country, where we hunt, fish, “make groceries,” and enjoy the simple things. I exercise three times a week and practice relaxing on the off days. My immediate goal is to lose 15 pounds, and I’m focused on moving forward with intention and consistency. So pull up a chair and stay a spell — this blog follows my low‑carb journey, my Southern roots, and now, my Wegovy pill adventure.

Second-Chance Bread



Good thing for second chances !


Today, I decided to give the low carb bread machine recipe another try using my 1.5 to 2 lb. loaf bread machine.

As yall know, I screwed up the first loaf, by not adding any salt, and not adding more splenda.

I did it right this time. The recipe turned out fine, when doubled... but I found these attributes lagging.

The bread came out beautiful today, It has a very good quality and taste to it !

For breakfast, I had two scrambled eggs and one slice wheat bread.

Lunch: Hickory Farms Summer Sausage drizzled in olive oil, fried in my skillet. I made a sandwich with them on my freshly made low carb bread above !

Tonite, I had one cup of broccoli, some lunch meat slices and three strawberries cut up drizzled with whipped cream.

I'm trying the bread.
I got my machine, got the yeast bought. I'm ready!!!!
I've been through a ruff couple of days and I need something to get me back on the right track again and the bread is JUST the thing....

New VIsion, do you have a 1 pound machine or a 1.5 to 2 lb machine ?

Remember to DOUBLE the recipe to get that perfect two pound loaf :)

Hmm, I've just been informed that my little comment was accidentally deleted.

I think I just said that the bread looks delicious! I wish I hadn't given my bread machine away when I started LC ... who knew! Two carbs per slice, that is awesome.

Sorry about that ! I know others have had problems with the blogspot not working. I accidently deleted one of my own comments with yours... and then I read on another blog where people were not receiving their comments when someone posted, so I'm not sure whats going on
